For those of you who know me well you know that I’m definitely not a cook or a baker! I’m more of a throw something easy and quick in the oven kind of girl.
So even I was surprised when I managed to make these yummy snacks, and how easy it was. They are perfect for an afternoon snack when you’re feeling tired, and great for an energy boost. Here’s the recipe below, you can play around as you wish as I tend to guess measurements and you can also add in your own flavourings:
100 grams of cashew nuts
50 grams almond flakes
50 grams oats
8 Medjool dates (pitted)
Either 1/3 bar of dark or milk chocolate
OR
1/2 teaspoon of ground ginger or cinnamon
Pulse in the blender until it turns into a nice sticky mixture, add a splash of milk if too crumbly
Roll into balls and store in the fridge!
