Thank goodness for quinoa!

I had to cut wheat and potatoes out of my diet a few years ago, and I felt really tired as no carbs! Then I discovered quinoa, although I had no idea how to pronounce it. I have it most days with avocado, fish or chicken, I love the taste and it gives me energy. It’s high in protein, iron, potassium, calcium and vitamin E. I just add a pinch of Himalayan salt and pepper for flavour. Give it a try if you haven’t already 😁xx
